How to Cook Snow Crab Clusters

Snow crab clusters are one of the easiest seafood meals you can make at home — mostly because they are already cooked when you buy them. Your job is just to warm them through without turning the meat rubbery, and that is much simpler than most people think.

If your crab is frozen, thaw it overnight in the refrigerator. Thawing at room temperature or in warm water makes the meat weep and lose flavour. Once thawed, the clusters are ready to steam.

Bring an inch of water to a boil in a large pot with a steamer insert and a pinch of salt. Drop in the clusters, cover, and steam for 4 to 5 minutes — just until they are hot all the way through. Overcooking is the only real mistake; the meat is already cooked, so you are warming, not cooking.

Serve with melted butter, lemon wedges and a little garlic mayo. A pair of kitchen shears makes cracking the shells far easier than a mallet, and you lose less meat. Leftover crab picks cleanly into the shells the next day for a sandwich or salad.
